Happy Memorial Day

Memorial Day is I believe the kick off for the backyard barbecue for most of this country. Let's not forget the reason behind this National Holiday and remember those soldiers that have fought and are fighting for our country. Every year my family visits the cemetery to honor my uncle and brother, and Steve will be doing the same here planting flowers in memory of his parents and lighting a candle. This will be the first Memorial Day that Steve and I won't be together in Michigan since we met and it'll seem strange that he's not manning the barbecue with my nephew-in-law and father but I have a bridal shower in Michigan and he has to work until Sunday so it makes no sense for both of us to drive 5 hours for the day. So I'll do a little cooking before I leave so he'll have something in the fridge and won't have to go to McDonalds for the day. I think I'll even try Barbara's black bean and corn salad, it sounded yummy.

So, have a happy and safe Memorial Day for those that are traveling. Are any of you doing anything special?

Let me know how the salad goes over, if you make it. I've done it for several potlucks and it always goes! Usually there's an empty bowl with one bean in it.
It works best to make it and let it cool on its own before putting it in the fridge and then bringing it back up to room temperature before eating. Something about ice cold black beans maybe, I'm not sure.

Will definitely let you know how it goes over. Will have to double the recipe, hopefully that'll go okay. Some recipes just don't work out so well if you do. I love beans of any kind so does most of the family that will be there on Monday which from last count seems to be around 30. Which me luck!

Hi Dani,

Have fun with all those Michiganders! We're planning to head back that way for at least 1 of 2 family reunions, but we will wait until we get the boys home. Probably in summer 2009.

That salad sounds good - you might have to make 2 batches because it doesn't sound like you'll have any leftovers!

Sounds like fun Shari .... Steve's family has an annual family reunion every summmer at a park, several do show up but they tend to hang more at Christmas lol I think that going away alone is good for ones soul it makes you realize how much "home" means to you. And Barbara the salad went over great there was only one kernal of corn left in the bowl. Will definitely be making it again.
